Left-over French Fry Casserole
  More often than not, I cook too many Frech fries in an attempt to be sure everyone gets their fill. Let's face it, left-over French fries are useles... not anymore! Make this casserole the "day after" and your family will rave.
   
 

Left-over French fries (use what you have up to 5 cups)
1/2 teaspoon salt (or to taste)
1 teaspoon black pepper (or to taste)
1 teaspoon Cajun seasoning (optional)
1 can cream of chicken soup
1/2 soup can milk
1 cup sour cream
2 cups shredded Cheddar cheese

   
  Combine all ingredients except cheese. Pour into a 9x13-inch baking dish; top with cheese. Bake at 350 degrees for 20 minutes or until completely heated and cheese is melted.
