Crispy Lemon Chicken
With only about 6 grams of fat per serving, this recipe is a healthy and delicious alternative to fried chicken.
 

1 pound skinless, boneless chicken tenders
2 teaspoons lemon juice
Salt and Lemon Pepper
1 tablespoon margarine
1/3 cup Special K cornflake crumbs

 

Preheat oven to 400 degrees. Wash chicken and pat dry; sprinkle all sides with lemon juice then salt and lemon pepper to taste. Place margarine in a 9x13-inch glass baking dish; place dish in oven to melt margarine. Place cornflake crumbs in a shallow bowl. Roll chicken in crumbs to coat well. Place in baking dish. Bake 15 minutes; turn. Bake an additional 10 minutes or until chicken is tender and completely done. Serves 4.
