2 cups rice
½ cup bell pepper, chopped very fine
½ cup onion, chopped very fine
1 cup chicken broth
2 cups hot water
Place rice, bell pepper, and onion in a 9 x 13-inch glass baking dish. Pour 1 cup chicken broth and 2 cups hot water over the top. Cover with foil and bake at 350 degrees for 1 hour.
