Cajun Breaded Catfish
   
 

4 catfish fillets
Salt and pepper to taste
1 cup fine breadcrumbs
1 tablespoon Cajun seasoning (or to taste)
3 eggs, beaten

   
  Salt and pepper catfish fillets. Combine breadcrumbs and Cajun seasoning. Dip fillets in beaten egg then roll to completely cover in breadcrumbs. Place in single layer in glass baking dish. Bake at 40 minutes at 400 degrees.
