Chewy Pecan Supreme Cookies
 

1/2 cup shortening
1 1/2 cups packed brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups self-rising flour
1 cup crushed cornflakes
1 1/2 cups chopped pecans
 
Cream shortening, brown sugar, eggs and vanilla. Add flour; mix well. Add cornflakes and pecans; mix well. Drop by teaspoonful on a cookie sheet treated with non-stick spray. Bake at 350 degrees for 10 minutes.
